A Super Easy HEALTHY Breakfast

Sausage, Egg and Cheese Muffins!

Well folks, Shannon and I had Sunday 3/17 off together.  Originally we took the day off to go see Sheryl Crow at SeaWorld but after the busy weeks we'd been having we decided to stay home and relax.

You see we've been meaning to find a church in the area to attend, and just have never had a Sunday morning off together to do so.  Well what better time than now!  We decided to go to First Baptist Church of Kissimmee, and we really enjoyed it.  But before we could go worship, we had to eat.  I made this recipe the night before, stored them in an air tight container in the fridge and then when we woke up the next morning we just popped them in the microwave and VOILA breakfast!

The original recipe from pinterest calls for broccoli.  Well being a picky eater, I don't really like broccoli so we omitted it.  But this is still totally a healthy on-the-go breakfast, the original recipe is also not nearly as healthy has this.  See nutritional info below:

Ingredients:

  • 1 1/2 cups of Jimmy Dean's fully cooked TURKEY sausage crumbles*
  • 3 cups of egg whites or egg substitute
  • 1/4 cup of skim milk
  • 1/2 Tbsp vegetable oil**
  • 1/2 tsp baking powder
  • salt and pepper to taste, or any other seasonings you add to your eggs***
  • 1 cup 2% milk shredded cheese (your favorite flavor, we used cheddar)
Instructions:

Here's were the easy part comes in!

  • Preheat oven to 375 F.
  • Whisk together egg whites/substitute, milk, oil and baking powder.  Season with salt and pepper (and any other spices you like!)
  • Lightly spray a 12-cupcake pan with oil. Spoon out the sausage crumbles evenly into each cupcake.
  • Ladle the egg mixture over sausage
  • Sprinkle with cheese.
  • Bake for 15-20 minutes. 
Notes:

*If you're a vegetarian, or want to save additional calories, you can omit the sausage all together and they would still be great!

**I'm  not sure why you need the vegetable oil, if you wanted to omit it and save the calories and fat, I'm sure the recipe will still work.

***If you're watching sodium, added salt and additional spices will add to the sodium count.  So be careful of this.
